Vanilla is the one and only spice I can remember from my childhood. My dad had such a love of vanilla that it was almost spoken of in a hushed tone with a bit of reverence. And any time we had a chance to eat it, cook with it or smell it ... we did.
This month I decided to make my own vanilla extract. I was amazed it is so simple.
Take 2 vanilla beans and split them lengthwise starting about an inch from the top. Place the beans in a bottle and cover with vodka. Seal the jar tightly and place in a cool, dark place for two months. Shake the bottle occasionaly. When the vanilla is ready, use it as you would any store bought vanilla but top of the bottle once in a while to make new vanilla!
