It is a Sunday morning. I am 7 years old. I am in the kitchen with my dad. I can smell the toast. White. Wonder Bread. I can picture the melting Skippy Crunchy Peanut Butter on one side. I can feel the sticky Fluff on the other side. There it is. The FlufferNutter. My most joyful breakfast.
Well, I don't eat peanut butter and fluff sandwiches for breakfast anymore. It is more like fruit and nuts. Maybe a coconut milk yogurt. But even though I have moved to a healthier way of breakfasting, I have never lost my love of the FlufferNutter. So I made it into a cupcake.
Use your favorite recipe for a peanut butter cupcake. Maybe even put a little peanut butter filling inside. Then top it with this easy marshmallow icing.
1/2 cup butter
1 cup confectioners sugar
1 cup Fluff
1 tsp vanilla
Beat all ingredients until light and fluffy.
Now enjoy your cupcake for a snack. Or .... well... maybe even for breakfast!
